Years and years ago I was studying political science at university and cooking in a bar in New Orleans. After a couple semesters, I realized that I was spending way more time in the kitchen than in the classroom, so I moved back to New York and went to culinary school. I spent a few years cooking at some of the best restaurants in Manhattan and then decided that I wanted to spend a little bit of time abroad before settling down. I moved to Prague and planned to stay here for a few months before going home to focus on my career, but somehow 8 years later, I’m still here. Several times I tried to get out of the restaurant business. As much as I love it, it’s not exactly conducive to stable, long term relationships. But I couldn’t stay away for too long so I opened a bar and then a food truck and catering business. Now my team and I travel all over Prague and the Czech Republic on a mission to show Europe that American food is more than just burgers and fries.
